How can I use Cubase SX to record...? For example, if I'm playing something in Itunes, can I use the 24 track audio recorder to record. . . ??

Unfortunately - no. You can record only from the inputs that are set up in VST connections menu. You can plug your soundcard out to your mic input and record this way.
